Spicy Black Bean & Corn Soup

The volume of the vegan vibe is on the rise and more and more are dancing to the rhythm of rejecting animal cruelty, protecting the environment and healthy eating. That’s some trio!

Taking up a vegan diet is one of best decisions one can make when it comes to health. Lower fat, lower cholesterol and higher dietary fiber are just three of the benefits of going vegan. You may really like your doctor as a person, but by going vegan, the chances are you’re going to see less and less of them in the future.

Contrary to what some non-vegans have to say, a vegan diet is extremely varied and versatile. Creativity and veganism go hand in hand. While potentially new foodstuffs like tofu or tempeh beckon for vegans, old favorites like canned fruits and canned vegetables absolutely play their part too.

You get some great advantages when using canned goods as part of your vegan diet. The food is kept at the peak of ripeness and freshness and all the nutrient good-stuff is kept firmly within. You also get the added advantage of long-term storage in your pantry and all year-round availability. It comes as no surprise that food savvy vegans always make sure that they have plenty of canned fruits and canned vegetables in reserve.

So, with that in mind, if you’ve a yearning for a vegan soup with more bite than a sarcastic shark, using both canned corn and canned black beans, try this quick and easy recipe:

Spicy Black Bean & Corn Soup

  • 1 c canned corn
  • 3 c canned black beans
  • 2 cans diced tomatoes
  • 1-2 chopped onions
  • 6 cloves of garlic
  • 2 c vegetable broth
  • ¼ c Worcestershire sauce (check it’s vegan)
  • ¼ c Frank’s red-hot sauce
  • 2 T cumin
  • ¼ c dried chives
  • 1 T paprika
  • 1 t cayenne
  • 1 T chipotle chilli powder
  • 1 t black pepper
  • 2 t salt
  • 5 c water

The “how to” for the soup couldn’t be easier.

Throw all of the ingredients into a crockpot. Cook overnight on a low heat for at least 8 hours. You can make it as spicy as you want to be or vary the ingredients with say less garlic but more canned corn, all to taste, and off you go!

As spicy as you want it to be, low fat, no oil and a ton of vitamins, the soup makes a perfect addition to any vegan diet.
